Processing technology

Lactic acid fermentation can be divided into two types: homogeneous lactic acid fermentation and heterogeneous lactic acid fermentation.

The reaction formula of homolactic acid fermentation is:

Glucose → pyruvate → lactic acid

The total fermentation reaction formula is:

C6H12O6→2CH3CHOHCOOH

In this process, 1mol glucose can produce 2mol lactic acid.

Heterotypic lactic acid fermentation not only produces lactic acid, but also produces carbon dioxide and acetic acid. Its biosynthesis pathway can be divided into glucose 6-phosphate pathway and bifidus pathway.

Glucose 6-phosphate pathway is CO2

Glucose → glucose-6-phosphate → ↗ Xylose-5-phosphate → glyceraldehyde-3-phosphate → pyruvate → lactic acid

The reaction formula is: C6H12O6 + O2 → CH3CHOHCOOH + CH3COOH + CO2 + H2O

 

Bifidobacterium pathway is a way of producing lactic acid by Bifidobacterium fermentation. The total reaction formula is:

2C6H12O6→2CH3CHOHCOOH+3CH3COOH

In this fermentation process, 1mol glucose can produce 1mol lactic acid and 1.5mol acetic acid.
